Ingredients
  

For the Lentils

  • 1 cup lentils brown or green lentils work best

For the Base

  • 1 tablespoon olive oil used for sautéing
  • 1 medium onion, chopped provides base flavor
  • 3 cloves garlic, minced infuses with robust flavor
  • 1 can diced tomatoes contributes acidity
  • 2 cups vegetable broth enhances flavor
  • 1 tablespoon chili powder adds warmth
  • 1 teaspoon cumin provides earthy flavor
  • Salt and pepper to taste for seasoning
  • Fresh cilantro for garnish adds fresh finish

Instructions
 

  • In a sauté pan, heat the olive oil over medium heat. Add the chopped onion and cook until translucent.
  • Add the minced garlic and chopped bell pepper. Sauté for a few minutes until softened.
  • Stir in the lentils, diced tomatoes, vegetable broth, chili powder, cumin, salt, and pepper.
  • Bring the mixture to a boil, then reduce heat and simmer for about 30 minutes, or until lentils are tender.
  • Garnish with fresh cilantro before serving.

Notes

This dish is versatile. You can add other vegetables or spices according to your preference.
