For the Chicken

Instructions
 

  • In a mixing bowl, combine raspberry preserves, olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, kosher salt, black pepper, and red pepper flakes to create the glaze.
  • Season the chicken thighs with kosher salt, black pepper, and chili powder. Heat olive oil in a skillet over medium heat. Add the chicken and cook until golden brown and cooked through, about 5-7 minutes per side.
  • Once the chicken is cooked, pour the glaze over the chicken and let it simmer for a few minutes until thickened.
  • Serve the chicken topped with sliced jalapeno and fresh raspberries.

Notes

You can adjust the level of spiciness by adding more or less jalapeno or red pepper flakes as per your taste.
