For the Casserole

cooked, shredded chicken

corn kernels
fresh, canned, or frozen and thawed

cream cheese
softened

sour cream

mayonnaise
1 ½

shredded mozzarella or Monterey Jack cheese
plus more for topping

grated Parmesan cheese
For the Seasoning

chili powder

paprika

Salt and black pepper

chopped fresh cilantro
Juice of 1
lime

Instructions
Preheat your oven to 350°F (175°C).
In a mixing bowl, combine the chicken, corn, cream cheese, sour cream, mayonnaise, mozzarella cheese, Parmesan cheese, chili powder, paprika, garlic powder, salt, pepper, cilantro, and lime juice. Mix well.
Transfer the mixture to a greased baking dish. Top with additional mozzarella cheese if desired.
Bake for 30 minutes or until bubbly and golden on top.
Serve hot with optional jalapeños and hot sauce.
