Ingredients
  

For the Casserole

  • 2 cups cooked, shredded chicken
  • 4 cups corn kernels fresh, canned, or frozen and thawed
  • 8 ounces cream cheese softened
  • ½ cup sour cream
  • ½ cup mayonnaise
  • 1 ½ cups shredded mozzarella or Monterey Jack cheese plus more for topping
  • ½ cup grated Parmesan cheese

For the Seasoning

  • 1 tablespoon chili powder
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • to taste Salt and black pepper
  • ¼ cup chopped fresh cilantro
  • Juice of 1 lime

Optional Toppings

  • sliced jalapeños for extra kick
  • hot sauce for extra kick

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the chicken, corn, cream cheese, sour cream, mayonnaise, mozzarella cheese, Parmesan cheese, chili powder, paprika, garlic powder, salt, pepper, cilantro, and lime juice. Mix well.
  • Transfer the mixture to a greased baking dish. Top with additional mozzarella cheese if desired.
  • Bake for 30 minutes or until bubbly and golden on top.
  • Serve hot with optional jalapeños and hot sauce.
