Ingredients
  

For the Filling

  • 8 oz cream cheese, softened
  • ¼ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream

For the Strawberry Layer

  • 1 cup fresh strawberries, diced
  • 2 tablespoons granulated sugar

For the Crumb Layer

  • 1 ½ cups crushed shortbread cookies or graham crackers
  • ¼ cup unsalted butter, melted

For the Base and Garnish

  • 6 large crepes or thin cake layers
  • Powdered sugar for dusting

Instructions
 

  • In a mixing bowl, combine the softened cream cheese, granulated sugar, and vanilla extract. Mix until smooth.
  • In another bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
  • In a separate bowl, mix the diced strawberries with granulated sugar and let them sit for a few minutes.
  • Combine the crushed cookies or graham crackers with melted butter.
  • Spread a layer of the cream cheese mixture on each crepe, add the strawberries, then sprinkle the crumb mixture on top. Roll them up tightly.
  • Dust the rolls with powdered sugar before serving.

Notes

Chill the rolls for an hour before serving for better flavor.
