Instructions
In a mixing bowl, combine the softened cream cheese, granulated sugar, and vanilla extract. Mix until smooth.
In another bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
In a separate bowl, mix the diced strawberries with granulated sugar and let them sit for a few minutes.
Combine the crushed cookies or graham crackers with melted butter.
Spread a layer of the cream cheese mixture on each crepe, add the strawberries, then sprinkle the crumb mixture on top. Roll them up tightly.
Dust the rolls with powdered sugar before serving.
Notes
Chill the rolls for an hour before serving for better flavor.
