Ingredients
  

Chicken Marinade

  • 1 lb chicken breast tenders, cut into ½-inch-thin strips
  • 1 teaspoon toasted sesame oil
  • ¼ teaspoon ground white pepper

Stir-Fry

  • 2 tablespoon peanut oil or vegetable oil, divided
  • 5–6 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • 1 teaspoon red chili flakes
  • ½ cup roughly chopped red onion
  • a handful snow peas, trimmed
  • ½ red bell pepper thinly sliced

Sauce

  • 1 tablespoon rice vinegar
  • 2 tablespoon low-sodium soy sauce
  • 2 teaspoon dark soy sauce
  • 2 teaspoon Chinese rice wine or dry sherry (optional)
  • ½ tablespoon brown sugar
  • 2 teaspoon cornstarch

Instructions
 

  • Marinate the chicken strips with sesame oil and ground white pepper for at least 10 minutes.
  • Heat 1 tablespoon of oil in a wok over medium-high heat. Add chicken and stir-fry until cooked through. Remove and set aside.
  • Add remaining oil to the wok. Stir-fry garlic, ginger, and red chili flakes until fragrant. Add onion, snow peas, and bell pepper, and stir-fry until tender.
  • Return the chicken to the wok. Mix together sauce ingredients and pour over. Stir until combined and thickened.

Notes

Serve hot over rice or noodles. Adjust chili flakes for desired spice level.
