1lbchicken breast tenders, cut into ½-inch-thin strips
1teaspoontoasted sesame oil
¼teaspoonground white pepper
Stir-Fry
2tablespoonpeanut oil or vegetable oil, divided
5–6clovesgarlic, minced
1tablespoonfreshly grated ginger
1teaspoonred chili flakes
½cuproughly chopped red onion
a handfulsnow peas, trimmed
½red bell pepperthinly sliced
Sauce
1tablespoonrice vinegar
2tablespoonlow-sodium soy sauce
2teaspoondark soy sauce
2teaspoonChinese rice wine or dry sherry (optional)
½tablespoonbrown sugar
2teaspooncornstarch
Instructions
Marinate the chicken strips with sesame oil and ground white pepper for at least 10 minutes.
Heat 1 tablespoon of oil in a wok over medium-high heat. Add chicken and stir-fry until cooked through. Remove and set aside.
Add remaining oil to the wok. Stir-fry garlic, ginger, and red chili flakes until fragrant. Add onion, snow peas, and bell pepper, and stir-fry until tender.
Return the chicken to the wok. Mix together sauce ingredients and pour over. Stir until combined and thickened.
Notes
Serve hot over rice or noodles. Adjust chili flakes for desired spice level.
