Ingredients
  

For the Quesadillas

  • 4 medium tortillas flour, whole wheat, or gluten-free
  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 2 tablespoons olive oil or butter for cooking

Optional Add-Ins

  • ¼ cup sun-dried tomatoes, chopped optional
  • ¼ cup black olives, sliced optional
  • ½ cup cooked grilled chicken, diced optional

Instructions
 

  • Heat olive oil or butter in a skillet over medium heat.
  • Place a tortilla in the skillet, add spinach and feta, and any optional add-ins. Top with another tortilla.
  • Cook for about 3-4 minutes until golden, then flip and cook the other side until crispy.
  • Remove from skillet, cut into wedges, and serve warm.

Customize your quesadillas with different add-ins to suit your taste.
