For the Quesadillas

fresh spinach, chopped

feta cheese, crumbled

Instructions
Heat olive oil or butter in a skillet over medium heat.
Place a tortilla in the skillet, add spinach and feta, and any optional add-ins. Top with another tortilla.
Cook for about 3-4 minutes until golden, then flip and cook the other side until crispy.
Remove from skillet, cut into wedges, and serve warm.
