Ingredients
  

For the bowl

  • 1 lb ground beef lean preferred
  • 1 lb red potatoes diced
  • 1–2 cups shredded cheddar or Colby Jack cheese
  • 1 cup chopped lettuce or mixed greens
  • 1 small onion diced
  • 1–2 tablespoons olive oil

For the special sauce

  • ½ cup mayonnaise
  • ¼ cup ketchup
  • 1 tablespoon yellow or Dijon mustard
  • ½ teaspoon Cajun seasoning adjust to taste

Instructions
 

  • In a skillet, heat olive oil over medium heat. Add diced potatoes and cook until golden brown and tender.
  • In the same skillet, add ground beef and diced onion. Season with salt and black pepper. Cook until beef is browned and cooked through.
  • In a mixing bowl, combine mayonnaise, ketchup, mustard, and Cajun seasoning to make the special sauce.
  • Assemble the bowl with potatoes, beef mixture, greens, cheese, and drizzle with special sauce.

Notes

You can customize the toppings by adding your favorite ingredients.
