Ingredients
  

For the Chicken

  • 1.5 pounds boneless skinless chicken breast, cubed

For the Vegetables

  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 cup broccoli florets

For the Sauce

  • ½ cup unsalted cashews
  • 2 tablespoons olive oil
  • ¼ cup low-sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • In a mixing bowl, combine the chicken, bell peppers, and broccoli. Drizzle with olive oil and soy sauce. Toss to coat.
  • In a small bowl, whisk together honey, rice vinegar, garlic, ginger, cornstarch, and water. Pour over the chicken mixture and toss to combine.
  • Spread the mixture evenly on a sheet pan and top with cashews.
  • Bake for 25 minutes or until the chicken is cooked through and the vegetables are tender.
