For the Bake

  • 4 large eggs
  • 1 cup cooked potatoes, diced
  • ½ cup shredded cheddar cheese
  • 2 tablespoons chopped fresh chives
  • ¼ cup milk or dairy-free alternative
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • pinch garlic powder optional

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, whisk the eggs, milk, salt, and pepper together.
  • Stir in the cooked potatoes, cheddar cheese, chives, and garlic powder if using.
  • Pour the mixture into a greased baking dish.
  • Bake for 30 minutes or until the eggs are set and the top is lightly golden.
