Instructions
Preheat your oven to 400°F (200°C).
In a bowl, combine feta cheese, ricotta cheese, and thyme if using. Mix until well combined.
Take one sheet of phyllo pastry, brush it with melted butter or olive oil, and place another sheet on top. Repeat until you have 3 sheets.
Cut the layered phyllo into strips. Place a spoonful of the cheese mixture at one end and roll it up to form a roll. Seal the edges with more melted butter.
Place the rolls on a baking sheet and bake for 15 minutes or until golden brown.
In a small saucepan, heat honey and red chili flakes together until warm. Drizzle over the baked rolls.
Notes
Serve the rolls warm with the chili honey drizzle for the best flavor.
