Ingredients
  

Pasta

  • 1 cup orzo pasta

Base

  • 2 tablespoons olive oil
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth

Greens

  • 2 cups fresh spinach, roughly chopped

Cheese

  • ½ cup grated Parmesan cheese

Spices

  • ½ teaspoon crushed red pepper flakes optional

Seasoning

  • Salt and freshly ground black pepper to taste

Garnish

  • Fresh parsley, finely chopped for garnish

Instructions
 

  • Heat olive oil in a pot over medium heat. Add diced onion and cook until soft.
  • Add minced garlic and cook for 1 minute until fragrant.
  • Pour in the vegetable broth and bring to a boil. Add orzo pasta and cook according to package instructions.
  • Stir in the chopped spinach and cook until wilted.
  • Remove from heat and stir in grated Parmesan cheese. Season with red pepper flakes, salt, and pepper.
  • Garnish with fresh parsley before serving.
