One Pot Creamy Tuscan Garlic Spaghetti

Ingredients
  

For the Pasta

  • 12 oz spaghetti

For the Sauce

  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes (optional)
  • 1 cup cherry tomatoes, halved
  • ¼ cup sun-dried tomatoes, chopped (optional)
  • 2 cups baby spinach
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup fresh basil, chopped

Instructions
 

  • In a large pot, heat olive oil over medium heat. Add minced garlic and red pepper flakes, and sauté until fragrant.
  • Add cherry tomatoes and sun-dried tomatoes. Cook until tomatoes soften.
  • Stir in spinach, heavy cream, salt, and black pepper. Bring to a simmer.
  • Add spaghetti and enough water to cover. Cook until pasta is al dente and sauce thickens.
  • Remove from heat and stir in Parmesan cheese and fresh basil. Serve warm.

Notes

You can adjust the spice level by adding more or less red pepper flakes. Fresh herbs can enhance the flavor.
