For the Cake

  • 2 cups chopped rhubarb
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup milk

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease a baking dish.
  • In a mixing bowl, combine all ingredients and mix until smooth. Pour the batter into the prepared baking dish.
  • Bake for 45 minutes or until a toothpick inserted in the center comes out clean.
  • Allow to cool before slicing and serving.
