Ingredients
  

For the Chicken

  • 4 pieces boneless, skinless chicken thighs or breasts
  • 1 cup buttermilk

For the Coating

  • 2 cups all-purpose flour
  • 3 cups vegetable or peanut oil for frying
  • ½ cup cayenne pepper
  • ¼ cup light brown sugar
  • 2 tablespoons smoked paprika

For Serving

  • 4 pieces brioche buns
  • to taste dill pickle chips for serving

Instructions
 

  • Marinate the chicken thighs in buttermilk for at least 30 minutes.
  • Mix flour, cayenne pepper, brown sugar, and paprika. Dredge marinated chicken in the flour mixture.
  • Heat oil in a frying pan. Fry the chicken until golden brown and cooked through.
  • Assemble the sandwiches with fried chicken, brioche buns, and dill pickle chips.

Notes

Adjust the spice level by adding more or less cayenne pepper.
