For the Esquites

  • 4 cups corn kernels fresh or frozen
  • ½ cup mayonnaise
  • ½ cup sour cream
  • ½ cup crumbled Cotija cheese
  • ¼ cup chopped cilantro
  • 1 tablespoon chili powder
  • 1 tablespoon lime juice

Salt and pepper to taste

Instructions
 

  • In a large bowl, combine corn kernels, mayonnaise, sour cream, Cotija cheese, cilantro, chili powder, and lime juice.
  • Mix well and season with salt and pepper to taste.

Notes

You can adjust the spice level by adding more or less chili powder.
