Mexican Street Cauliflower

Ingredients
  

For the Cauliflower

  • 1 large head Cauliflower
  • 1 tablespoon Mild Tasting Oil See notes below

For the Topping

  • ¼ cup Mayonnaise
  • 1 teaspoon Chili Powder
  • ½ cup Cotija Cheese Crumpled
  • cup Fresh Cilantro
  • Lime wedges

Instructions
 

  • Preheat the oven to 425°F (220°C).
  • Cut the cauliflower into florets and toss with oil. Spread on a baking sheet.
  • Roast in the oven for 20 minutes or until golden and tender.
  • In a bowl, mix mayonnaise, chili powder, and cotija cheese.
  • Remove cauliflower from the oven and drizzle the sauce over it.
  • Garnish with cilantro and serve with lime wedges.

Notes

You can adjust the amount of chili powder based on your spice preference.
