For the Cauliflower

For the Topping

Mayonnaise

Chili Powder

Cotija Cheese
Crumpled

Fresh Cilantro
Lime wedges
Instructions
Preheat the oven to 425°F (220°C).
Cut the cauliflower into florets and toss with oil. Spread on a baking sheet.
Roast in the oven for 20 minutes or until golden and tender.
In a bowl, mix mayonnaise, chili powder, and cotija cheese.
Remove cauliflower from the oven and drizzle the sauce over it.
Garnish with cilantro and serve with lime wedges.
Notes
You can adjust the amount of chili powder based on your spice preference.
