Ingredients
  

For the Salmon

  • 4 fillets salmon skin-on or skinless

For the Sauce

  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 3 cloves garlic minced
  • ¼ cup sun-dried tomatoes chopped, oil-packed for best flavor
  • ¼ cup heavy cream
  • ¼ cup chicken broth
  • ¼ cup Parmesan cheese freshly grated
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • to taste Salt
  • to taste Pepper
  • for garnish Fresh parsley chopped

Instructions
 

  • In a skillet, heat the olive oil and butter over medium heat.
  • Add the minced garlic and sauté until fragrant, about 1 minute.
  • Place the salmon fillets in the skillet and season with salt and pepper. Cook for 4-5 minutes on each side until cooked through.
  • Remove the salmon and set aside. In the same skillet, add sun-dried tomatoes, heavy cream, chicken broth, Parmesan cheese, thyme, and basil. Stir and simmer for a few minutes.
  • Return the salmon to the skillet, spoon the sauce over it, and cook for an additional 2 minutes.
  • Garnish with fresh parsley before serving.

Notes

This dish pairs well with rice or vegetables. Adjust seasoning to your preference.
