Ingredients
  

For the Chicken

  • 1 tablespoon olive oil
  • 1.5 pounds boneless skinless chicken pounded to even thickness
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For the Pasta

  • 10 ounces penne pasta
  • 1 cup sun-dried tomatoes drained
  • 3 tablespoons butter
  • 2 cups chicken broth
  • 2 teaspoons dried Italian seasoning
  • 1 cup grated Parmesan cheese
  • 1 teaspoon paprika
  • 1 cup heavy cream room temperature
  • 3 tablespoons flour
  • 2 teaspoons minced garlic

For Garnish

  • Fresh basil torn
  • Additional Parmesan cheese optional, for serving

Instructions
 

  • Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper, then cook until golden and cooked through.
  • In a pot, cook penne pasta according to package instructions. Drain and set aside.
  • In the skillet, melt butter. Add garlic and cook until fragrant. Stir in flour and cook for 1 minute.
  • Add chicken broth, heavy cream, Italian seasoning, paprika, and sun-dried tomatoes. Stir until combined and simmer for a few minutes.
  • Stir in cooked pasta and Parmesan cheese until well-coated. Garnish with fresh basil and serve with additional Parmesan if desired.

Notes

You can add more vegetables if desired. Adjust seasoning according to your taste.
