Ingredients
  

For the Crust & Topping

  • 7 tablespoons unsalted butter softened to room temperature
  • ¾ cup light or dark brown sugar packed
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour spooned & leveled
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup old-fashioned oats or quick oats not instant

For the Lemon Filling

  • 1 can full-fat sweetened condensed milk
  • 6 tablespoons lemon juice from about 2 lemons
  • 1 tablespoon lemon zest from about 1 lemon

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a baking dish.
  • In a mixing bowl, combine the butter, brown sugar, and vanilla extract. Mix well.
  • Add the flour, baking powder, salt, and oats to the butter mixture. Stir until combined.
  • Press half of the mixture into the bottom of the greased baking dish.
  • In another bowl, whisk together the sweetened condensed milk, lemon juice, and lemon zest until smooth.
  • Spread the lemon filling over the crust in the baking dish.
  • Sprinkle the remaining oat mixture over the lemon filling.
  • Bake for 25 minutes or until the topping is golden brown.
  • Allow to cool before cutting into bars.

Notes

These bars can be served chilled or at room temperature. Store leftovers in the refrigerator.
