Ingredients
  

For the Chicken

  • 2 pieces chicken breasts (cubed or sliced thin)

For the Gnocchi

  • 1 lb potato gnocchi (store-bought or homemade)

For the Vegetables

  • 2 cups baby spinach
  • 1 cup cherry tomatoes, halved

For the Sauce

  • 3 cloves garlic, minced
  • 1 piece zest and juice of 1 lemon
  • 1 cup chicken broth
  • ½ cup heavy cream (or coconut cream for dairy-free)
  • 1 tablespoon olive oil
  • to taste Salt and black pepper
  • for garnish Fresh basil or parsley

Instructions
 

  • Heat olive oil in a skillet over medium heat. Add chicken and cook until browned and cooked through.
  • Add garlic, cherry tomatoes, and spinach to the skillet. Cook until spinach wilts.
  • Stir in chicken broth, lemon juice, and zest. Bring to a simmer.
  • Add gnocchi and cream. Cook until gnocchi is heated through.
  • Season with salt and pepper. Garnish with fresh basil or parsley before serving.

Notes

You can use coconut cream for a dairy-free version. Adjust seasoning to your taste.
