Ingredients
  

For the Beef

  • 1 lb beef sirloin, thinly sliced

For the Vegetables

  • 1 cup kimchi, chopped
  • 1 medium yellow onion, sliced
  • 1 cup bell peppers (any color), sliced

For the Cheese

  • 4 slices provolone or American cheese

For the Marinade

  • 2 tablespoon low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 2 teaspoon vegetable oil

Optional Marinade Additions

  • minced garlic for marinade
  • sugar for marinade

Instructions
 

  • Heat vegetable oil in a skillet over medium heat.
  • Add the beef sirloin and cook until browned.
  • Stir in the kimchi, onion, and bell peppers. Cook until vegetables are tender.
  • Mix in the soy sauce and sesame oil. Cook for another minute.
  • Top with cheese slices and cover until melted.
  • Serve in a sandwich or on a plate.

Notes

You can adjust the amount of kimchi to taste. Add minced garlic and sugar for extra flavor in the marinade.
