Ingredients
  

For the Chicken

  • 2 pieces boneless, skinless chicken breasts
  • ¼ cup honey
  • ¼ cup lime juice freshly squeezed is best
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon ground cumin

For the Rice

  • 1 cup long-grain rice white or brown
  • 1 ¾ cups chicken broth or water

For the Toppings

  • 1 ripe avocado diced
  • ½ cup cherry tomatoes halved
  • ¼ cup red onion finely chopped
  • ¼ cup fresh cilantro chopped
  • 1 lime cut into wedges for serving

Instructions
 

  • In a bowl, mix honey, lime juice, olive oil, minced garlic, ground cumin, salt, and pepper. Add chicken and marinate for at least 30 minutes.
  • Cook rice in chicken broth or water according to package instructions. Once cooked, fluff and set aside.
  • Grill the marinated chicken over medium heat for about 6-7 minutes on each side or until fully cooked.
  • Slice the grilled chicken and serve it over the rice. Top with diced avocado, cherry tomatoes, red onion, and cilantro. Serve with lime wedges.

Notes

You can customize this dish with additional toppings like cheese or different vegetables.
