For the Chicken

boneless, skinless chicken breasts

honey

lime juice

olive oil

garlic

ground cumin
For the Rice

cup
long-grain rice
white or brown
1 ¾

chicken broth or water
For the Toppings

ripe
avocado
diced

cup
cherry tomatoes
halved

red onion
finely chopped

fresh cilantro

lime
cut into wedges for serving
Instructions
In a bowl, mix honey, lime juice, olive oil, minced garlic, ground cumin, salt, and pepper. Add chicken and marinate for at least 30 minutes.
Cook rice in chicken broth or water according to package instructions. Once cooked, fluff and set aside.
Grill the marinated chicken over medium heat for about 6-7 minutes on each side or until fully cooked.
Slice the grilled chicken and serve it over the rice. Top with diced avocado, cherry tomatoes, red onion, and cilantro. Serve with lime wedges.
Notes
You can customize this dish with additional toppings like cheese or different vegetables.
