Instructions
Preheat your oven to 375°F (190°C).
In a baking dish, place the chicken breasts and drizzle with olive oil. Season with salt, black pepper, garlic powder, and thyme.
In a bowl, mix cranberries, honey, and balsamic vinegar. Pour the mixture over the chicken.
Spread ricotta cheese on top of the chicken and sprinkle with chopped pecans.
Bake for 30 minutes or until the chicken is cooked through. Garnish with chopped parsley before serving.
