Ingredients
  

For the Chicken

  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • ½ teaspoon garlic powder
  • ½ teaspoon dried thyme

For the Sauce

  • 1 cup fresh or frozen cranberries
  • 3 tablespoons honey
  • 1 tablespoon balsamic vinegar

For the Topping

  • 1 cup ricotta cheese
  • ¼ cup chopped pecans optional for crunch
  • 2 tablespoons chopped fresh parsley for garnish

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a baking dish, place the chicken breasts and drizzle with olive oil. Season with salt, black pepper, garlic powder, and thyme.
  • In a bowl, mix cranberries, honey, and balsamic vinegar. Pour the mixture over the chicken.
  • Spread ricotta cheese on top of the chicken and sprinkle with chopped pecans.
  • Bake for 30 minutes or until the chicken is cooked through. Garnish with chopped parsley before serving.

This dish pairs well with a side of rice or a green salad.
