For the Bread Dough

warm water
(105-115°F)

teaspoon
sugar
1
packet
active dry yeast
2

bread flour
2
cups
all-purpose flour
2
teaspoon
salt

olive oil

For the Filling
1
jar
raspberry preserves
(Bonne Maman or similar)
For the Glaze
2
cups
confectioners’ sugar
2-4
tablespoon
whole milk
(or as needed for consistency)
Instructions
In a mixing bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy.
Add the bread flour, all-purpose flour, salt, and 4 tablespoons of olive oil. Mix until a dough forms.
Knead the dough on a floured surface for about 10 minutes until smooth. Place in a greased bowl and let rise for 1 hour.
Preheat the oven to 375°F. Punch down the dough and spread it on a baking sheet.
Make indentations in the dough and fill with raspberry preserves. Let it rise for another 30 minutes.
Bake for 25 minutes or until golden brown. Let cool.
To make the glaze, mix confectioners’ sugar with enough milk to reach desired consistency. Drizzle over the cooled focaccia.
Notes
This focaccia is best enjoyed fresh. You can use different flavors of preserves if desired.
