Ingredients
  

For the batter

  • ¼ teaspoon ground nutmeg for warm spice notes
  • 1 teaspoon vanilla extract
  • 4 large eggs room temperature
  • ½ teaspoon ground cinnamon freshly ground preferred
  • 2 tablespoon dark rum optional but recommended for authentic eggnog flavor
  • 1.5 cups eggnog for rich, creamy flavor

For the French toast

  • 1 loaf crusty country-style bread cut into ¾-inch thick slices
  • 3 tablespoon unsalted butter I use Kerrygold for rich flavor

For serving

  • whipped cream freshly whipped adds best texture
  • maple syrup

Instructions
 

  • In a mixing bowl, whisk together the eggs, eggnog, nutmeg, cinnamon, vanilla extract, and dark rum until smooth.
  • Heat a skillet over medium heat and melt 1 tablespoon of butter. Dip each slice of bread into the batter, allowing excess to drip off, then place in the skillet. Cook until golden brown, about 3-4 minutes per side.
  • Repeat with remaining bread slices, adding more butter to the skillet as needed. Serve warm topped with whipped cream and maple syrup.

Notes

This French toast is best served fresh. You can adjust the spices and rum according to your taste.
