Ingredients
  

Meat

  • 2 pounds beef chuck or stew meat

Cooking Ingredients

  • 2 tablespoons oil
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • ½ teaspoon oregano

Vegetables

  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 3 cups potatoes, peeled and diced
  • 2 cups roasted green chiles, chopped

Liquids

  • 3 cups beef broth
  • 1 cup water
  • 1 tablespoon flour optional for thickening

Instructions
 

  • Heat oil in a large pot over medium heat. Add beef and brown on all sides.
  • Add onion, garlic, and spices. Cook until the onion is soft.
  • Add potatoes, green chiles, beef broth, and water. Bring to a boil.
  • Reduce heat and simmer for about 2 hours or until beef is tender.
  • If desired, stir in flour to thicken the stew.

Notes

You can adjust the spice level by using milder or hotter green chiles.
