  • 1 pound ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 cups spinach, chopped

For Garnish

  • Fresh parsley for garnish

Instructions
 

  • Heat olive oil in a skillet over medium heat. Add chopped onion and garlic; sauté until onion is translucent.
  • Add ground turkey to the skillet. Cook until browned, breaking it apart with a spatula.
  • Stir in diced sweet potatoes, bell pepper, smoked paprika, cumin, salt, and pepper. Cook until sweet potatoes are tender.
  • Add chopped spinach and cook until wilted. Serve hot, garnished with fresh parsley.
