Ingredients
  

For the Casserole

  • 1 pound ground beef
  • 2 medium zucchinis, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup shredded cheddar cheese
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • 2 tablespoons olive oil

For Garnish

  • Fresh parsley, chopped for garnish

Instructions
 

  • Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned.
  • Add onion, garlic, and zucchini to the skillet. Cook until the vegetables are tender.
  • Stir in diced tomatoes, Italian seasoning, salt, and pepper. Cook for another 5 minutes.
  • Sprinkle cheese on top and cover until melted.
  • Garnish with fresh parsley before serving.

Notes

You can add other vegetables as desired. Adjust seasoning to your taste.
