For the Casserole

ground beef

zucchinis, sliced

medium
onion, chopped
2
cloves
garlic, minced

can (14.5 oz)
diced tomatoes, undrained

shredded cheddar cheese

teaspoon
Italian seasoning
to taste
Salt and pepper

olive oil
For Garnish
Fresh parsley, chopped
for garnish
Instructions
Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned.
Add onion, garlic, and zucchini to the skillet. Cook until the vegetables are tender.
Stir in diced tomatoes, Italian seasoning, salt, and pepper. Cook for another 5 minutes.
Sprinkle cheese on top and cover until melted.
Garnish with fresh parsley before serving.
Notes
You can add other vegetables as desired. Adjust seasoning to your taste.
