Ingredients
  

For the Marinade

  • 1 lb chicken breast cut into 1-inch chunks
  • 2.5 tablespoon olive oil I prefer Bertolli Extra Virgin for marinades
  • 2.5 tablespoon lemon juice
  • 2 cloves garlic freshly minced for best flavor
  • 2 teaspoon oregano
  • ½ teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ¼ teaspoon red pepper flakes

For the Salsa

  • 1.25 cups cucumbers diced into ½-inch pieces
  • 1 cup tomatoes seeded and diced into ½-inch pieces
  • 1 cup bell pepper
  • ¼ cup red onion finely chopped, about ¼-inch pieces
  • 2 tablespoon parsley
  • ¾ cup feta I use Athenos Crumbled Feta
  • 1 tablespoon lemon juice

For the Assembly

  • ½ cup tzatziki gives a nice creamy and rich texture

Instructions
 

  • In a mixing bowl, combine chicken, olive oil, lemon juice, garlic, oregano, paprika, salt, pepper, and red pepper flakes. Mix well and marinate for at least 15 minutes.
  • Grill the marinated chicken on medium-high heat for about 10 minutes or until fully cooked. Remove from grill and let rest.
  • In another bowl, mix cucumbers, tomatoes, bell pepper, red onion, parsley, feta, and lemon juice. Season with salt and pepper.
  • To assemble, place grilled chicken and salsa inside each pita and add tzatziki. Serve immediately.

Notes

You can customize the salsa with your favorite vegetables or herbs.
