Ingredients
  

For the Filling

  • 2 cups mashed sweet potatoes about 2 large sweet potatoes
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • ½ cup milk
  • ¼ cup unsalted butter melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt

For the Crust

  • 1 pre-made pie crust store-bought or homemade

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, milk, melted butter, eggs, vanilla extract, cinnamon, nutmeg, and salt. Mix until smooth.
  • Pour the filling into the prepared pie crust.
  • Bake for 45 minutes or until the filling is set and the crust is golden brown.
  • Let it cool before serving.

Notes

You can serve this cobbler warm or chilled. It pairs well with whipped cream or vanilla ice cream.
