Ingredients
  

For the Roll Ups

  • 1 lb thinly sliced roast beef deli style or leftover
  • 1.5 cups shredded mozzarella or provolone cheese
  • 4 large flour tortillas
  • 2 tablespoons butter melted
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley

For the Au Jus

  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon soy sauce
  • 1 teaspoon onion powder for au jus
  • 1 teaspoon garlic powder for au jus
  • Salt and pepper to taste

Instructions
 

  • In a mixing bowl, combine the roast beef, mozzarella or provolone cheese, garlic powder, onion powder, and dried parsley.
  • Spread the mixture evenly on each tortilla, then roll them up tightly.
  • Brush the outside of the rolled tortillas with melted butter.
  • Heat a skillet over medium heat and cook the roll ups until golden brown on all sides.
  • In a small saucepan, combine the beef broth, Worcestershire sauce, soy sauce, onion powder, garlic powder, salt, and pepper. Bring to a simmer to make the au jus.
  • Serve the roll ups with the au jus for dipping.

Notes

For added flavor, consider using different cheeses or adding sautéed peppers and onions to the filling.
