Instructions
Heat olive oil in a large skillet over medium heat. Add the smoked sausage and cook until browned.
Add the chopped onion, green bell pepper, and red bell pepper. Sauté until the vegetables are tender.
Stir in the minced garlic and cook for an additional minute.
Add the diced tomatoes, tomato sauce, kidney beans, pinto beans, rice, chicken broth, chili powder, smoked paprika, cayenne pepper, oregano, black pepper, and salt. Stir well.
Bring the mixture to a boil. Reduce the heat to low, cover, and simmer for 25-30 minutes or until the rice is cooked.
Serve hot and garnish with hot sauce and chopped green onions if desired.
Notes
Feel free to adjust the spice levels by adding more cayenne or hot sauce.
