Ingredients
  

For the Rice Dish

  • 1 pound smoked sausage sliced into ¼-inch rounds
  • 1 large onion chopped
  • 1 green bell pepper chopped
  • 1 red bell pepper chopped
  • 2 cloves garlic minced
  • 1 can (14.5 ounce) diced tomatoes undrained
  • 1 can (15 ounce) tomato sauce
  • 1 can (15 ounce) kidney beans rinsed and drained
  • 1 can (15 ounce) pinto beans rinsed and drained
  • 1 cup long-grain white rice uncooked
  • 2 ½ cups chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon cayenne pepper or more, to taste
  • ½ teaspoon dried oregano
  • ¼ teaspoon black pepper
  • to taste Salt
  • 2 tablespoons olive oil

Optional Garnishes

  • Hot sauce to taste
  • Chopped green onions for garnish

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Add the smoked sausage and cook until browned.
  • Add the chopped onion, green bell pepper, and red bell pepper. Sauté until the vegetables are tender.
  • Stir in the minced garlic and cook for an additional minute.
  • Add the diced tomatoes, tomato sauce, kidney beans, pinto beans, rice, chicken broth, chili powder, smoked paprika, cayenne pepper, oregano, black pepper, and salt. Stir well.
  • Bring the mixture to a boil. Reduce the heat to low, cover, and simmer for 25-30 minutes or until the rice is cooked.
  • Serve hot and garnish with hot sauce and chopped green onions if desired.

Notes

Feel free to adjust the spice levels by adding more cayenne or hot sauce.
