Avocado Salsa
2mediumavocadosripe but firm, chopped
1cupcherry tomatoesquartered OR 2 Roma tomatoes, seeded and chopped
1earsweet cornfresh corn from 1 ear
⅓cupred onionfinely chopped
½mediumred bell pepperchopped
1mediumjalapeno pepperdiced, seeds separated
2tablespoonscilantrofinely chopped
1clovegarlicminced or ¼ teaspoon garlic powder
2tablespoonslime juice
¼teaspoonground cumin
¼teaspoonsalt
⅛teaspoonblack pepperor more to taste
Instructions
Prepare the Fiesta Lime Rub by mixing olive oil, lime juice, lime zest, chili powder, brown sugar, salt, ground cumin, smoked paprika, onion powder, garlic powder, chipotle chili powder, and black pepper in a bowl.
Rub the mixture onto the chicken breasts and let sit for a few minutes.
Cook the chicken in a skillet over medium-high heat for about 20 minutes, or until cooked through.
While the chicken cooks, prepare the avocado salsa by combining avocados, cherry tomatoes, corn, red onion, red bell pepper, jalapeno, cilantro, garlic, lime juice, ground cumin, salt, and black pepper in a mixing bowl.
Serve the chicken topped with avocado salsa.
Notes
You can adjust the spice level by adding more or less chipotle chili powder.
