In a saucepan, combine sugar, corn syrup, and water. Cook over medium heat until the mixture reaches a soft ball stage (234°F).
While the syrup cooks, beat egg whites in a mixing bowl until stiff peaks form. Gradually pour in the hot syrup, beating continuously until the mixture is thick and glossy. Stir in vanilla and nuts if using.
Drop spoonfuls of the mixture onto wax paper and let cool completely.
