Ingredients
  

For the Candy

  • 2 ½ cups granulated sugar
  • ½ cup light corn syrup
  • ½ cup water
  • 2 large egg whites
  • 1 teaspoon vanilla extract
  • ½ cup chopped pecans or walnuts optional

Instructions
 

  • In a saucepan, combine sugar, corn syrup, and water. Cook over medium heat until the mixture reaches a soft ball stage (234°F).
  • While the syrup cooks, beat egg whites in a mixing bowl until stiff peaks form. Gradually pour in the hot syrup, beating continuously until the mixture is thick and glossy. Stir in vanilla and nuts if using.
  • Drop spoonfuls of the mixture onto wax paper and let cool completely.

Notes

Store the divinity candy in an airtight container at room temperature.
