Instructions
Preheat your oven to 375°F (190°C).
In a baking dish, combine the rice and chicken broth. Place the chicken breasts on top, and drizzle with olive oil. Season with salt and pepper.
Bake in the preheated oven for 30 minutes.
While the chicken and rice are baking, prepare the tzatziki sauce by combining yogurt, minced garlic, grated cucumber, dill, lemon juice, oregano, and paprika in a mixing bowl.
Once the chicken has finished baking, remove it from the oven and let it rest for a few minutes. Serve the chicken on top of the rice with tzatziki sauce.
Notes
You can add diced zucchini or bell pepper to the rice for extra flavor.
