Instructions
Slice the cucumbers into ⅓rd inch thick pieces and place them in a serving bowl.
In a separate bowl, mix the soy sauce, rice vinegar, peanut butter, honey, minced garlic, chili flakes, black pepper, and parsley to create the peanut sauce.
Pour the peanut sauce over the cucumbers and toss gently to combine.
Sprinkle toasted peanuts on top before serving.
