  • 2 large English cucumbers sliced about ⅓rd inch thick
  • ½ teaspoon salt
  • ½ cup chopped peanuts toasted

Peanut Sauce

  • 2 tablespoons low-sodium soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons peanut butter
  • 1 tablespoon honey
  • 2 cloves garlic minced
  • 1 teaspoon dried red chili flakes
  • ¼ teaspoon ground black pepper
  • 2 tablespoons chopped fresh parsley

Instructions
 

  • Slice the cucumbers into ⅓rd inch thick pieces and place them in a serving bowl.
  • In a separate bowl, mix the soy sauce, rice vinegar, peanut butter, honey, minced garlic, chili flakes, black pepper, and parsley to create the peanut sauce.
  • Pour the peanut sauce over the cucumbers and toss gently to combine.
  • Sprinkle toasted peanuts on top before serving.

Notes

You can adjust the level of spiciness by varying the amount of chili flakes.
