Crunchy Thai Peanut Chicken Wraps

These wraps combine shredded chicken with fresh vegetables and a creamy Thai peanut sauce.

Ingredients
  

For the Wraps

  • 2 cups cooked chicken breast, shredded
  • 1 cup shredded cabbage (green or purple)
  • 1 cup carrots, julienned
  • 1 each red bell pepper, thinly sliced
  • 2 each green onions, sliced
  • 4 large tortillas or wraps
  • 2 tablespoon fresh cilantro, chopped

For the Thai Peanut Sauce

  • 3 tablespoon peanut butter
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon honey or maple syrup
  • ¼ teaspoon chili flakes (optional)
  • 2–3 tablespoon warm water (to thin)

Instructions
 

  • In a mixing bowl, combine the chicken, cabbage, carrots, red bell pepper, green onions, and cilantro.
  • In another bowl, whisk together the peanut butter, soy sauce, lime juice, honey or maple syrup, chili flakes, and warm water until smooth.
  • Spread the mixture onto each tortilla or wrap and roll them tightly. Cut in half and serve with the peanut sauce.

Notes

You can customize the veggies based on your preference. Adjust the peanut sauce thickness by adding more or less water.
