Ingredients
  

For the Filling

  • 2 cups cooked, shredded chicken
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper jack cheese
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • to taste Salt and pepper
  • ¼ cup chopped cilantro

For the Taquitos

  • 12 small flour or corn tortillas
  • 1 tablespoon olive oil spray or olive oil

For Serving

  • Salsa, sour cream, and guacamole for serving

Instructions
 

  • Preheat your oven to 425°F (220°C).
  • In a mixing bowl, combine shredded chicken, cheddar cheese, pepper jack cheese, cumin, chili powder, garlic powder, onion powder, cilantro, salt, and pepper. Mix well.
  • Place a small amount of filling on each tortilla, roll them tightly, and place seam-side down on a baking sheet.
  • Lightly spray the taquitos with olive oil or brush with olive oil.
  • Bake for 20 minutes or until golden brown and crispy.
  • Serve with salsa, sour cream, and guacamole.

Notes

For extra crunch, you can broil them for a few minutes after baking.
