In a mixing bowl, combine shredded chicken, cheddar cheese, pepper jack cheese, cumin, chili powder, garlic powder, onion powder, cilantro, salt, and pepper. Mix well.
Place a small amount of filling on each tortilla, roll them tightly, and place seam-side down on a baking sheet.
Lightly spray the taquitos with olive oil or brush with olive oil.
Bake for 20 minutes or until golden brown and crispy.
Serve with salsa, sour cream, and guacamole.
Notes
For extra crunch, you can broil them for a few minutes after baking.
