For the Soup

boneless, skinless chicken breasts

diced onion

garlic, minced

chicken broth

diced tomatoes

heavy cream
For a lighter version, substitute half-and-half.

grated Parmesan cheese

Italian seasoning

For the Garnish

tortellini (fresh or frozen)

Instructions
Place the chicken breasts, diced onion, garlic, chicken broth, diced tomatoes, heavy cream, Italian seasoning, salt, and pepper into the Crock Pot.
Cook on low for 4 hours. Shred the chicken and stir in the tortellini and spinach. Cook for an additional 30 minutes.
Serve hot, garnished with fresh basil.
Notes
You can adjust the thickness of the soup by adding more or less chicken broth. Serve with crusty bread for a complete meal.
