Ingredients
  

For the Beef

  • 1.5 pounds shaved beef steak or ribeye, sirloin, or ground beef

For the Vegetables

  • 1 large onion, sliced
  • 2 count bell peppers, sliced (green or mixed colors)
  • 8 ounces mushrooms, sliced (optional)

For the Broth and Cheese

  • 3 cups beef broth
  • 8 ounces cream cheese, softened
  • 2 cups shredded mozzarella cheese or provolone

For the Tortellini

  • 20 ounces cheese tortellini, fresh or frozen

For the Seasoning

  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon salt to taste
  • 0.5 teaspoon black pepper

Instructions
 

  • Add the shaved beef, onion, bell peppers, and mushrooms to the Crock Pot.
  • Pour in the beef broth and add the cream cheese, stirring to combine.
  • Stir in the mozzarella cheese, tortellini, garlic powder, Italian seasoning, salt, and black pepper.
  • Cover and cook on low for 4 hours or until the tortellini is tender.

Notes

Feel free to add extra vegetables or adjust seasonings to your preference.
