Instructions
Preheat your oven to 425°F (220°C).
Boil the small potatoes in a pot until fork-tender, about 15 minutes. Drain and let cool slightly.
Place the potatoes on a baking sheet and gently smash each one with a fork or your palm.
Drizzle the smashed potatoes with olive oil and sprinkle with salt, black pepper, garlic powder, and rosemary.
Bake in the preheated oven for 20-25 minutes, or until crispy and golden brown.
Notes
For extra crispiness, you can broil the potatoes for an additional 2-3 minutes after baking.
