Ingredients
  

Carrots

  • 6 medium carrots, peeled

Seasoning

  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon kosher salt
  • 2 teaspoons garlic, minced
  • ½ teaspoon onion powder
  • ½ teaspoon red pepper flakes
  • 1 teaspoon fresh rosemary, chopped

Parmesan Cheese

  • 2 cups (200 g) parmesan cheese, grated, divided

Garnish

  • parsley, chopped for garnish

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • In a bowl, toss the peeled carrots with olive oil, salt, garlic, onion powder, red pepper flakes, and rosemary.
  • Spread the carrots on a baking sheet in a single layer and sprinkle with half of the Parmesan cheese.
  • Roast in the preheated oven for 25 minutes, flipping halfway through, until they are tender and starting to brown.
  • Remove from the oven and immediately sprinkle with the remaining Parmesan cheese.
  • Garnish with chopped parsley before serving.

Notes

For a spicier version, increase the amount of red pepper flakes.
