parmesan cheese, grated, divided
Garnish
parsley, chopped for garnish
Instructions
Preheat the oven to 400°F (200°C).
In a bowl, toss the peeled carrots with olive oil, salt, garlic, onion powder, red pepper flakes, and rosemary.
Spread the carrots on a baking sheet in a single layer and sprinkle with half of the Parmesan cheese.
Roast in the preheated oven for 25 minutes, flipping halfway through, until they are tender and starting to brown.
Remove from the oven and immediately sprinkle with the remaining Parmesan cheese.
Garnish with chopped parsley before serving.
Notes
For a spicier version, increase the amount of red pepper flakes.
