Ingredients
  

Main Ingredients

  • 4 oz cod fillets about 6 oz each
  • 2 tablespoons olive oil

Parmesan Coating

  • ½ cup grated Parmesan cheese
  • ¾ cup panko breadcrumbs
  • 1 teaspoon lemon zest
  • ½ teaspoon garlic powder

Seasonings & Garnish

  • salt and freshly ground black pepper to taste
  • 2 tablespoons unsalted butter melted
  • 1 tablespoon fresh parsley chopped
  • 1 lemon lemon cut into wedges (for serving)

Instructions
 

  • Preheat the air fryer to 400°F (200°C).
  • In a mixing bowl, combine the Parmesan cheese, panko breadcrumbs, lemon zest, and garlic powder.
  • Brush the cod fillets with olive oil and season with salt and pepper.
  • Press the cod fillets into the Parmesan coating mixture to adhere.
  • Place the coated fillets in the air fryer basket and cook for 12-15 minutes until golden and crispy.
  • While the cod cooks, prepare the herb butter sauce by mixing the melted butter and chopped parsley.
  • Serve the cod with lemon wedges and drizzle the herb butter sauce on top.

This dish pairs well with a side salad or steamed vegetables.
