Ingredients
  

For the Beef Sauce

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 lb lean ground beef (90/10 or 93/7)
  • 2 tablespoon tomato paste
  • 1 teaspoon Italian seasoning
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup beef broth
  • ½ cup Greek yogurt or cottage cheese
  • 1 ½ cups shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese

For the Pasta

  • 8 oz penne or rigatoni pasta (high protein if preferred)
  • 1 tablespoon chopped fresh parsley (optional)

Instructions
 

  • Heat olive oil in a skillet over medium heat. Add the diced onion and cook until softened.
  • Add minced garlic and ground beef to the skillet. Cook until the beef is browned.
  • Stir in tomato paste, Italian seasoning, smoked paprika, salt, and black pepper. Cook for another minute.
  • Add beef broth and bring to a simmer. Reduce heat and stir in Greek yogurt or cottage cheese, mozzarella, and Parmesan cheese.
  • Cook the pasta according to package instructions. Drain and add to the beef sauce.
  • Mix well and serve, garnished with parsley if desired.

Notes

You can substitute Greek yogurt with cottage cheese for a different texture. Adjust seasoning to taste.
