Ingredients
  

For the Pasta

  • 8 oz pasta

For the Chicken

  • 2 breasts chicken, sliced lengthwise
  • ½ teaspoon garlic powder
  • salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • ½ cup chicken broth
  • ¾ cup heavy cream
  • ¼ cup pesto
  • ½ teaspoon lemon juice
  • ¼ cup sun-dried tomatoes
  • 2 cups fresh baby spinach
  • freshly grated Parmesan cheese (optional)

Instructions
 

  • Cook the pasta according to package instructions. Drain and set aside.
  • In a skillet, heat olive oil and butter over medium heat. Add the chicken and season with garlic powder, salt, and pepper. Cook until the chicken is done.
  • Stir in the flour and cook for a minute, then add chicken broth and heavy cream. Mix until smooth.
  • Add pesto, lemon juice, sun-dried tomatoes, and spinach. Cook until spinach wilts.
  • Toss in the cooked pasta and mix well. Serve with Parmesan cheese if desired.

Notes

You can add other vegetables or adjust seasoning to your taste.
