Instructions
Cook the penne pasta according to package instructions until al dente. Drain and set aside.
In a skillet, heat the butter and cooking oil over medium heat. Add the chicken pieces, Cajun seasoning, salt, and pepper. Cook until the chicken is browned and cooked through.
Add the diced onion, minced garlic, and sliced bell pepper to the skillet. Cook until the vegetables are soft.
Pour in the white wine and let it simmer for a few minutes. Then, add the double cream and grated parmesan. Stir until combined and heated through.
Mix in the cooked pasta until well coated with the sauce. Garnish with fresh parsley before serving.
Notes
You can adjust the spiciness by adding more Cajun seasoning. Serve with a side salad for a complete meal.
