Ingredients
  

Pasta

  • 250 g penne pasta (or your favorite pasta shape)

Chicken

  • 2 pieces chicken breasts cut into small bite-sized pieces

Seasoning

  • 1 tablespoon Cajun seasoning (or more if you like it spicy!)

Cooking Essentials

  • 1 tablespoon butter
  • 1 tablespoon cooking oil
  • to taste Salt & black pepper

Vegetables

  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 piece red bell pepper (you can also use green and yellow, or a combination of colors)

Liquids

  • ½ cup white wine (or chicken broth)
  • 1 cup double cream (heavy cream)
  • ½ cup grated parmesan

Garnish

  • Fresh parsley for garnish

Instructions
 

  • Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  • In a skillet, heat the butter and cooking oil over medium heat. Add the chicken pieces, Cajun seasoning, salt, and pepper. Cook until the chicken is browned and cooked through.
  • Add the diced onion, minced garlic, and sliced bell pepper to the skillet. Cook until the vegetables are soft.
  • Pour in the white wine and let it simmer for a few minutes. Then, add the double cream and grated parmesan. Stir until combined and heated through.
  • Mix in the cooked pasta until well coated with the sauce. Garnish with fresh parsley before serving.

Notes

You can adjust the spiciness by adding more Cajun seasoning. Serve with a side salad for a complete meal.
