Instructions
Preheat the oven according to the crescent roll dough instructions.
In a mixing bowl, combine the cream cheese, granulated sugar, egg, and vanilla extract until smooth.
Roll out the crescent roll dough and cut into small squares.
Place a spoonful of the cheesecake filling in the center of each square and fold the corners over to seal.
Bake according to the dough instructions until golden brown.
Mix the granulated sugar and cinnamon in a bowl.
Once the bites are baked, toss them in the cinnamon sugar mixture while they are still warm.
Notes
For a different flavor, try adding a bit of lemon zest to the cheesecake filling.
