In a mixing bowl, beat the cream cheese until smooth. Add the powdered sugar, vanilla extract, dried cherries, and graham crackers. Mix until well combined.
Chill the mixture for about 15 minutes, then scoop out small portions and roll them into balls.
Melt the chocolate chips and coconut oil together. Dip each truffle into the chocolate and place them on a baking sheet lined with parchment paper.
Refrigerate the truffles until the chocolate is set. Serve chilled.
