Ingredients
  

For the Chicken Crust

  • 1 lb ground chicken
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 large egg
  • 1 teaspoon dried Italian herbs (oregano, basil)
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil for cooking

For the Caesar Salad Topping

  • 2 cups romaine lettuce, chopped
  • ¼ cup Caesar dressing preferably creamy
  • ¼ cup grated Parmesan cheese
  • ½ cup cooked chicken pieces, seasoned and crisped or chicken bacon bits optional
  • Freshly ground black pepper to taste

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a mixing bowl, combine the ground chicken, mozzarella cheese, Parmesan cheese, egg, Italian herbs, garlic powder, salt, and pepper.
  • Spread the chicken mixture onto a baking sheet to form a crust.
  • Bake for 25 minutes or until the crust is golden and cooked through.
  • Remove from the oven and top with chopped romaine, Caesar dressing, additional Parmesan cheese, and cooked chicken pieces if desired.
  • Return to the oven for a few minutes to warm the toppings, then serve.

Notes

You can substitute the cooked chicken with chicken bacon bits for extra flavor.
