For the Bruschetta Pasta Salad

mafalde corta or lasagnette pasta

extra virgin olive oil

cherry tomatoes, halved or quartered

For the Sourdough Croutons

slices
sourdough bread

extra virgin olive oil
Salt to taste
Instructions
Cook pasta according to package instructions. Drain and set aside.
In a large bowl, combine olive oil, garlic, cherry tomatoes, white wine vinegar, oregano, salt, and pepper. Mix well.
Add the cooked pasta, mozzarella, basil, croutons, and Parmigiano Reggiano to the bowl. Toss to combine.
Drizzle with balsamic glaze before serving.
